Brioche is a knitting technique that creates a stretchy, squishy, two-sided fabric that resembles a rib stitch. While knitting, purling and yarn overs are the basic knit stitches, the combination of those basic stitches is what gives brioche its unique and very stretchy appearance and squishy feel.
